This premium, genuine Caribbean rum is made by distilling sugar cane. It is aged for 12 years in charred European oak barrels. The oak itself must have grown for over 100 years and the wood used to make the barrel has undergone natural outdoor drying for at least 2 years. Equalization takes place exclusively in wooden vats. The filtration method is a closely guarded company secret. We can smell caramel and vanilla in the aroma. The taste reflects smoky oak and honey. The finish is complex with hints of spice and chocolate.
